Monkey Bread Recipe

A Monkey Bread Recipe By Home Style Austin

Perfect For Breakfast Gatherings

True Texans will go nuts for this sugary-simple recipe. Literally!

We took the time honored monkey bread recipe and cranked it up a bit Texas style with nuts (an abbreviation for Texas pecans) and Texas-made Falfurrias brand butter.

Foodie Tip:

  If you want to extend beyond the flavor border of pecan and craisin try experimenting with other combinations of your own like banana and caramel or walnut and raisin. You can also try a savory spin by skipping the sugar coating, rolling the biscuits in butter or olive oil then sprinkling them with bacon and cheese or your favorite herb.

We like this pecan-craisin version best to let’s get started!

Ingredients: 

½ Cup  |  Granulated Sugar
2 Teaspoons  |  Cinnamon
2 Cans (16.3 ounces each)  |  Pillsbury Grands Homestyle Refrigerated Buttermilk Biscuits
½ Cup  |  Pecans, Chopped
½ Cup  |  Craisins
¾ Cup  |  Falfurrias Brand Butter, Melted
1 Cup  | Brown Sugar, Firmly Packed

Directions: 

0. Heat oven to 350°F.

1. Lightly grease a 12-cup fluted tube pan (Bundt pan) with cooking spray or shortening.

2. In a large Ziploc storage bag mix the granulated sugar and the cinnamon and shake well to mix. Set aside.

3. Open the first can of Grands. Separate the dough into its 8 pieces and cut each piece into quarters. Place the quartered pieces into the bag of sugar, zip/close the bag and shake well to evenly coat the biscuit pieces. Open the bag and transfer the coated biscuit pieces into the pan. Top with half of the pecans and craisins.

4. Repeat step 3 with the second can of biscuits and finish off with a layer of the remaining nuts and craisins.

5. In a small bowl mix together the melted butter and the brown sugar and pour the mixture over the biscuit pieces.

6. Bake about 30 minutes or until the bread is golden brown and an inserted knife comes out clean. Let the bread rest in a pan about 10 minutes then turn it over upside down onto a serving plate to let all the sugary greatness cascade over the bread. Pull apart to serve.

Best served warm!

A Cinnamon Pecans Recipe From Home Style Austin

Cinnamon Pecans

In fall and winter my slow cooker is on the kitchen counter more than the toaster. There are so many great dishes you can make in a crock pot and this is one of my favorites.

Combining the taste of Texas Pecans and cinnamon these sweet treats are super-easy to make … perfect for gift-giving during the holidays!

Foodie Tips:

  Your pecans will darken as they cook, so don’t be alarmed! The result is a warm, cinnamon-y great taste.
  Your crock pot will develop a dry, crunchy residue as the pecans cook; this is normal. The residue will dissolve after a few minutes of soaking in warm water.

Ingredients: 

3  |  Egg Whites
1 1/2 Tablespoons  |  Vanilla
1 Cup  |  Brown Sugar
1 Cup  |  Sugar
3 Tablespoons  |  Cinnamon
1/4 Teaspoon  |  Salt
4 Cups  | Texas Pecan Halves
1-2 Pats  |  Butter
3 Tablespoons  |  Water

Directions: 

1. In a large bowl whisk together the egg whites and the vanilla.

2. In a smaller bowl, mix together the sugars, cinnamon and salt.

3. Add the pecan halves to the egg mixture and stir until well coated. Add the sugar mixture to the coated pecans and stir well.

4. Butter the bottom half of your slow cooker and leave any remaining butter (as a seasoning). Add your coated pecans into the slow cooker.

5. Cook on low for 3 hours, stirring every 30 minutes for 2.5 hours.

6. Add the water to the mixture then stir every 20 minutes for the last hour.

7. Transfer to a lightly greased baking sheet, spread pecans into a single layer and allow to cool. You can break any pecans clusters into individual pieces or leave them as clusters (the more the merrier)!

Store in an airtight container

Texas-Tuscany Beef Stew Recipe

A Texan Tuscan Beef Stew Recipe From Home Style AustinOne Hearty Meal

Even during the hottest days of summer, I dream of this amazing beef stew. Best of all, this stew is easy to make and even easier to eat!

The stew’s signature ingredients? Chianti-marinated beef brisket and a Texas jalapeño or three!

Foodie Tip:

 If you like tummy fillers like I do, you can serve the stew on top of rice or noodles. One thing we enjoy is that instead of boiling rice/pasta in water, we substitute water with beef or chicken broth for an extra-special flavor.

Ingredients: 

3-5 Pounds  |  Beef Brisket (get a good cut)
3-4 Cloves  |  Garlic, Halved
1 Bottle (750 ml)  |  Italian Chianti Wine
4 Tablespoons  |  Extra Virgin Olive Oil
To Taste  |  Kosher Salt And Freshly Ground Black Pepper
2-4 Cups  |  Beef Broth
3-5 Medium-Sized Carrots  |  Peeled And Cut Into 1″ Pieces
3 Stalks  |  Celery, Chopped Into 1/2″ Pieces
4 Medium  |  Russet Or Red Potatoes, Cut Into 1-1/2″ Chunks
3 4 Inch Sprigs  |  Fresh Rosemary, Chopped

Plus Ups:

1/2 Cup  |  Kalamata Olives, Halved
2 Leaves  |  Sage Or Bay
2-3  |  Jalapeños, For A Texas-Inspired Kick
To Enjoy  |  Rice Or Noodles (Optional)

Accessories:

To Cover  |  Cling Film
To “Pat” Beef Dry  |  Paper Towels
To Brown  |  A Dutch Oven Or Large Pan
To Cook  |  A Crock Pot (Or Slow Cooker)

Directions: 

1. Place the beef into a 13-inch by 9-inch glass baking dish. Cut 6-8 “slits” in the brisket and insert the garlic halves. Pour the wine over the meat and marinate in the refrigerator, loosely covered with cling film, for 2 hours (overnight recommended). Turn the meat over and marinate here and there.

2. Remove the brisket from the wine and “pat” it dry with paper towels. Reserve the wine.

3. In a large Dutch oven or large pan, heat 4 tablespoons of the olive oil over medium-high heat. Season the meat on all sides with salt and pepper.

4. Using tongs, place the meat in the pan and brown on all sides, about 2 minutes for each side. Remove the meat and place it into your Crock Pot.

5. In the pan, pour the reserved wine, scraping up any brown bits. Cook for about 1-2 minutes. Transfer into the Crock Pot.

6. Add beef broth to almost cover the beef. Cook on low Crock Pot setting for 2-2.5 hours.

7. Add the carrots, celery, garlic, potatoes and rosemary (plus the olives, sage and jalapeños, if desired). Cover and continue to cook on low setting for another 2-2.5 hours, or until tender.

8. [ Sidenote: The beef may already be soft and falling apart before you cut it! In this case, skip this step. If not… ] Remove the meat from the stew. Place the meat on a cutting board and cut into quarters. Using 2 forks, shred the meat into bite-sized pieces. Return the meat to the stew and cook until warmed through, about 5 minutes.

9. Serve with a glass of Chianti and enjoy!

Hatch-Chicken Mac n’ Cheese Recipe

A Smokey Love Affair

This time of year when the Hatch Chili Peppers make their bountiful cameo appearance, we get weak in the knees for all things hatch. Just perusing almost 100 recipes at Central Market’s website made us break an indoor sweat for this sensationally, seasonal pepper.

With hatches in hand we decided to incorporate these delightfully, smokey-tasting peppers into our interpretation of gourmet Mac n’ Cheese. This dish will take more time than it does to whip-up Mac from a box, but we think the results undoubtedly justify the labor of love.

Foodie Tips:

  • We prepare our hatch chili peppers and our chicken ahead of time so assembly time will be efficient; we have Mac n’ Cheese to eat! The roasted rotisserie chicken? We scored ours ready-to-go from our local HEB mere steps from an impressive Hatch Chili Pepper display.
  • Not sure how to roast your Hatch Chili Peppers? Here’s a helpful post I found that may help. We roasted our peppers on the outdoor grill. Our local HEB Plus! was even hosting hatch chili roasting events to make things even easier.
  • As an alternative to olive oil we have been having fun with avocado oil; it has a high smoke point and can offer various health benefits. We found our oil locally at Salt & Time on East 7th Street.
  • You can substitute the cheeses below with your favorites, like with Monterrey Jack or Mozzarella.
  • If it’s not hatch season you can use a couple cans of green chiles, although the flavor won’t be as smokey. If you’re out of shallots, try substituting red or white onions. No penne? Try elbow macaroni or your favorite sauce-hugging pasta (sorry, spaghetti, linguini and angel hair – we have other plans in store for you).

Ingredients: 

2  |  Shallots, Peeled, Roasted and Chopped
3 Cloves  |  Garlic, Peeled, Roasted and Chopped
2 Teaspoons  |  Avocado Oil (or olive oil)
2 Tablespoons  |  Flour
4 Cups  |  Heavy Whipping Cream
1 Teaspoon  |  Fresh Thyme, Chopped
2 Cups  |  Jalapeño Pepper Jack Cheese, Shredded
2 Cups  |  Cheddar Cheese, Shredded
To Taste  |  Salt and Freshly Ground Black Pepper
1 Pound  |  Penne Pasta, Cooked and Drained
4-5  |  Hatch Chili Peppers, Roasted, Skinned, Seeded and Chopped
2-3 Cups  |  Roasted Rotisserie Chicken, Deboned and Shredded
1/2 – 1 Cup  | Panko Bread Crumbs
2 Tablespoons  |  Falfurrias Brand Butter, Melted
2 Tablespoons  |  Italian Flat Leaf Parsley, Chopped

Making Mac n' Cheese with Home Style Austin

Directions: 

1. Place the peeled shallots and garlic in a small aluminum foil pouch and drizzle with 1 teaspoon of the oil. Roast on the grill (or indoor oven at 425°F) about 25 minutes, until tender. This is a good time to boil the water, prepare the pasta and set it aside after drining. Remove the shallot-garlic medley from oven/grill and give it some time to cool a bit. Remove the veggies from the foil then chop them up.

2. In a large sauté pan over medium heat, add another teaspoon of oil, the chopped vegetables then sauté for about a minute. Add the flour and stir for 1 minute (do not allow to burn). Whisk in the heavy cream and the thyme then stir in the Hatch Chili Peppers. Allow the mixture to reduce by a third.

3. Add your cheeses and stir until melted, creamy and thick. Season with salt and pepper as desired. Hungry yet? :)

4. Remove the cheese sauce from the heat and gently stir in the pasta and chicken. [Note: If your sauté pan is too small you can transfer the sauce into the pasta pot.] Transfer the Mac n’ Cheese into a 9″ x 13″ casserole dish and set aside. Preheat your oven to 350°F.

5. In a small bowl mix together the panko, butter and parsley; spread this mixture over the Mac n’ Cheese. Bake uncovered for about 25-35 minutes, until everything is browned and bubbly. Remove from oven, cool for a few minutes then serve.

Yields: 8-12 servings, depending on your appetite! Enjoy!
