Recipe: Hatchbrowns

Hatchbrowns Recipe by Home Style AustinHatch Attack

If you’re like me, by the time August rolls around I’m already in the comfort food state of mind. This is a special time of year when the smoky and spicy taste of hatch chili peppers delight!

While some invite hatch peppers to lunch or dinner only, I love welcoming hatch peppers at the start of my day; this inspiration is how this “hatchbrown” recipe was born. Enjoy it and the rest of your fall “flavorites!”

Foodie Tips:

❤  Nothing beats the taste of freshly smoked hatches. If you’re not sure how to roast your own here’s an article with some tips that will have you a culinary hatch wizard in a snap. Take advantage of hatch roasting events at HEB or Central Market and enjoy the smell on the car ride home – prior to the devouring!

❤  If you’re in a flurry outside of fresh hatch season you can keep some Trader Joe’s fire roasted and chopped hatch peppers on hand. They pack just as much punch as the fresh boys and I encourage you to keep a pouch in your freezer year-round for those heated moments when you gotta have yours.

❤  Eggs? Poached eggs are on my mind. Here’s a recipe for how to make perfectly poached eggs! Follow the video – and not so much the recipe text beneath it (which differs).

❤  You’re likely to find another popular hatch-inspired recipe or two here on the Home Style Austin Blog. (hint hint).

Ingredients:

3 – 5 Strips  |  Bacon
3  |  Gold Potatoes, Washed, Dried, and 1/4″ Cube-Diced
1 Tablespoon  |  Falfurrias Brand Butter
¼ Cup  |  Roasted Hatch Chili Peppers, Chopped or Diced
To Garnish  |  Green Onions (optional)
To Taste  |  Fresh Cracked Pepper and Sea Salt (optional)
To Serve  |  Your Favorite Eggs (optional)

What To Do:

1. Over medium heat fry the bacon and remove from pan. Keep the bacon drippings in the pan. You know this is going to be good. :)

2. Add the diced potatoes to the bacon renderings and add the butter. Return to heat, stir and cook until golden crispy, about 10-12 minutes.

3. Add the hatch peppers and stir into the potatoes until warm.

4. Garnish with onions, salt and pepper and serve with a side of eggs.

Yield: About 2 – 4 servings.

Recipe: Cheesy Carrot Dog Treats

Cheesy Carrot Dog Treats Recipe
An Easy Pack Pleaser

This is a treat recipe that my Doggies have enjoyed for many birthdays. So this month when my SuperLabby Harley turned 11, we knew exactly what to do!

This “mini muffins” recipe is surprisingly easy to make and we hope your pack digs it as much as ours.

Always check with your Vet about which foods are appropriate for you to share with your pet. Enjoy!

Ingredients:

1 Cup   All-Purpose Flour
1 Cup  |  Whole Wheat Flour
1 Tablespoon  |  Baking Powder
1 Cup  |  Cheddar Cheese, Grated
1 Cup  |  Carrot, Grated
2  |  Cage Free Eggs
1 Cup  |  Milk
¼ Cup  |  Vegetable Oil

What To Do:

1. Grease a mini muffin tin with baking spray.

2. Combine the two flours and baking powder; mix well.

3. Add the cheese and carrots and mix well with opposable thumbs and the rest of your fingers.

4. In a separate bowl beat the eggs and whisk in the milk and oil. Pour the batter over the dry mixture and stir gently by hand or with a wooden spoon until everything is mingling well.

5. About this time preheat your oven to 350°F. While it’s preheating…

6. …Fill the mini cups to just underneath the top of the pan. Bake 20-25 minutes until an inserted toothpick comes out clean.

7. Cool and serve. You just became your pup’s superhero! Again, and again!

Yields about 24 tail-waggin’ treats.

Strawberry Cake Recipe

Strawberry Cake with Cream Cheese Frosting Recipe
Very Berry Delicious

This cake has become a family favorite. It usually graces our table during the hot summer months and it’s loaded with the bright taste of strawberry – both inside the cake as well as the strawberry buttercream frosting. This cake has debuted at several family birthday parties and I hope you enjoy it as much as I do!

Foodie Tips:

After 2-3 attempts at making the icing I’ve mastered a non-runny frosting! You’ll want to drain the strawberries used in the frosting (not the cake) very well. I placed them in a small strainer to drain the initial juice by pressing with a spoon. Then I transfer the mashed berries to a coffee filter where I continue to blot until dry. If you find that your icing is still on the runny side you can add small batches of confectioner’s sugar until you reach your desired thickness.

I store my cake in a covered glass cake stand until the unveiling; it keeps the cake moist and leftovers will last for a few days in the fridge.

Decorating a cake can be as much fun as eating it (well kinda close). One way to make a surprising embellishment for your cake is to cut strawberry-shaped hearts using a small cookie cutter. Watch their eyes grow wide with your culinary skills!

Chocolate Chip Oatmeal Cookie Recipe

A Chocolate Chip Oatmeal Cookie Recipe From Home Style Austin
My Favorite Cookie

This recipe is a family favorite and I whipped up a few batches for the holidays … because cookies make everything better! What makes this my favorite? I think it’s the special blend of chocolate, oatmeal, pecans and two sugars that do not disappoint the tastebuds.

Foodie Tips:

At an early age I quickly learned that here in Texas that “nuts” is an abbreviation for “Texas Pecans.”

If you like chewy cookies like I do make sure and don’t bake these too long!

Ingredients:

1 Cup  |  Crisco
1 Teaspoon  |  Vanilla
1 Cup  |  Sugar
½ Cup  |  Brown Sugar (firmly packed)
2  |  Cage Free Eggs
1 Teaspoon  |  Baking Soda
3 Teaspoons  |  Baking Powder
1 ¾ Cups  |  Flour
1 Cup  |  Oatmeal
1 Cup  |  Nuts (a.k.a. Texas Pecans)

Directions:

1. Preheat oven to 350°F. That was easy!

2. Combine shortening, vanilla and sugars and cream well. Add well-beaten eggs and blend thoroughly.

3. Sift soda and baking powder with flour and add to the creamed mixture.

4. Add oatmeal and nuts and blend.

5. Drop on cookie sheet with a cookie scoop or teaspoon.

6. Bake at 350°F for 15-20 minutes. Remove from oven and let rest on a cooling rack.

A Great Banana Bread Recipe From Home Style Austin

Egg In A Cup Recipe

egg-in-a-cup

When We Say “Cup,” Bacon Is Implied  :)

Ingredients:

8 Slices  |  Bacon
6   |  Cage Free Eggs
1 Cup  |  Cheddar Cheese
1 Tablespoon  |  Fresh Thyme, Chopped
1 Tablespoon  |  Fresh Parsley, Chopped
To Taste  |  Fresh Cracked Black Pepper

What To Do:

0. Preheat oven to 400°F.

1. Cook the strips of bacon in a pan over medium heat until browned, but not crunchy-crispy. Transfer bacon to a plate topped with paper towels to drain and cool.

2. Spray 6 wells of a muffin tin with non stick cooking spray. Take a piece of bacon and wrap around the side of each muffin well. Cut the remaining two pieces of bacon into thirds and place each piece in the bottom of the muffin well to form the bottom of the bacon cup.

3. Crack one egg into each cup. Top each with a sprinkle of cheese, thyme, parsley and the black pepper.

4. Bake until set (about 10-12 minutes). If all goes well the egg will be slightly runny when you cut into it!

Yields: 6 Servings

Food Tips:

Home Style Austin Foodie Tip  Use your choice(s) of cheese. I’m partial to cheddar, but pepper jack and goat cheese are favorites, too!
Home Style Austin Foodie Tip  Sweet and savory make great breakfast buddies for this dish ~ Serve with a side of fresh fruits (grapes, pineapple and melon). Nobody leaves hungry!
