In what may be the last “super cold” blast of early 2020 for Central Texas we’ve already made 4 batches of this soup! #ThatGood

Not only is this soup easy to make, it’s a lower carb keto-friendly soup that’s wonderfully creamy with just the right amount of heat, thanks to our ol’ friend the hatch green chili — perfect for warming up cold days and nights!

❤  You can enjoy this soup served from a bowl but I also enjoy it from a mug where I can consume it faster.

Ingredients:

1-2 Tablespoons  Olive Oil (Or Avocado Oil)
2-3 Pounds  Boneless Chicken Breast, Sautéd Then Cubed
2 Cans (15 Ounces Each)  Hatch Green Chile Enchilada Sauce With Roasted Garlic (or without roasted garlic)
2 Cans (14.5 Ounces Each)  Low Sodium Chicken Broth
1 Cup  Half & Half
2-3 Cups  White Cheese, Shredded (Monterey Jack, Pepper Jack)
½ Cup Philadelphia Cream Cheese, Room Temperature, Cubed
½ – 1 Cup Green Salsa (Central Market Hatch Green Chile Salsa Verde works great)
To Taste  Kosher Salt And Fresh Cracked Black Pepper
To Garnish  Your Favorites: More Shredded Cheese, Cubed Avocado, Chopped Cilantro, Green Onion Tops, Chopped Tomatoes,

What To Do:

1. Prepare The Chicken: In a large pot over medium-high heat, warm the oil. Add the chicken and sauté the chicken until done (about 3-4 minutes on each side). Turn off the heat, remove the chicken from the pot, cool, cube and set aside

2. Back In The Pot We Go: Add the cubed chicken back to the pot and add the enchilada sauce, chicken broth, half & half, shredded cheese, the cubed cream cheese, salsa verde. Warm everything up until things are melty good (about 10 minutes).

3. The Finishing Touch: Salt and pepper to your liking. Spoon into bowls (or mugs) and garnish with your favorite ingredients (ideas shown above).

Strawberry Cake Recipe

Strawberry Cake with Cream Cheese Frosting Recipe
Very Berry Delicious

This cake has become a family favorite. It usually graces our table during the hot summer months and it’s loaded with the bright taste of strawberry – both inside the cake as well as the strawberry buttercream frosting. This cake has debuted at several family birthday parties and I hope you enjoy it as much as I do!

Foodie Tips:

  After 2-3 attempts at making the icing I’ve mastered a non-runny frosting! You’ll want to drain the strawberries used in the frosting (not the cake) very well. I placed them in a small strainer to drain the initial juice by pressing with a spoon. Then I transfer the mashed berries to a coffee filter where I continue to blot until dry. If you find that your icing is still on the runny side you can add small batches of confectioner’s sugar until you reach your desired thickness.

  I store my cake in a covered glass cake stand until the unveiling; it keeps the cake moist and leftovers will last for a few days in the fridge.

  Decorating a cake can be as much fun as eating it (well kinda close). One way to make a surprising embellishment for your cake is to cut strawberry-shaped hearts using a small cookie cutter. Watch their eyes grow wide with your culinary skills!
A Strawberry Heart Recipe From Home Style Austin

Ingredients: 

The Cake
1 Package  |  Plain White Cake Mix
1 Package  |  JELL-O Brand Strawberry Gelatin Mix
1 Cup  |  Mashed Strawberries With Juice
1 Cup  |  Vegetable Oil
½ Cup  | Whole Milk
4  |  Cage Free Eggs

The Frosting (can be doubled)
8 Ounce Package  |  Philadelphia Brand Cream Cheese, At Room Temperature
1  |  Stick Of Unsalted Butter (I suggest Texas born Falfurrias Brand)
3 ½ Cups  |  Confectioner’s Sugar
¾ Cup  |  Mashed Strawberries, Well Drained
To Garnish  |  Sliced Strawberries or Fresh Mint Leaves (optional)

Directions: 

1. To Prep: Preheat your oven to 350°F. Then lightly grease three 9-inch round cake pans and set them aside.

2. Make Cakes: In a large mixing bowl beat on low speed the six cake mix ingredients shown above. Divide the batter among the three pans and place them into the oven. Bake the cakes until they’re lightly brown (about 28-30 minutes). An inserted knife should come out clean. Remove the cakes from the oven and cool on a rack (about 45 minutes).

How to make Strawberry Cream Cheese Cake Frosting3. Make Frosting: Combine the cream cheese and butter in a medium bowl and mix on low speed for about a minute. Add sugar then the strawberries and blend on low until everything marries well.

4. To Assemble: Place one cake layer on a serving plate and spread the top with frosting. Add the second cake layer and frost the top. Top with the third cake layer and frost the top and sides of the entire layered cake.

5. Chill (optional): Your cake can be placed in the fridge to get it nice and cool. Serve chilled with a side of strawberry or vanilla ice cream. There’s nothing better!

When life brings us tortillas, we love to make tortilla roll-ups!

With no baking and just 3 ingredients, it doesn’t get any easier to make this time-honored family appetizer favorite that’s perfect for summertime gatherings.

Foodie Tips:

  • If you’re slicing your kalamata olives by hand be careful as they could have pit fragments – even if using pitted olives.
  • You can substitute kalamata olives with black olives if you prefer a milder taste.
  • We added 1-2 leaves of hand-torn basil onto the tortilla before rolling (shown below) and it was delicious! You can introduce a few ingredients of your choosing (shaved ham or sliced shrimp and avocado, etc.) to create your own signature roll-up.

Kalamata Olives For Tortilla Roll-ups By Home Style Austin
Ingredients:
 

8 Ounce Block  |  Cream Cheese, Softened
½ Cup  |  Kalamata Olives, Chopped
5-6  |  Flour Tortillas

Directions: 

1. In a medium-sized bowl, let your cream cheese rest at room temperature until softened (at least 30 minutes). You can slice it into 1-inch chunks to help expedite the softening process.

2. Add the olives to the cheese and fold well with a rubber spatula.

3. Place a schmear of the cream cheese mixture onto a single tortilla and spread evenly, leaving about ½-inch gap between the cheese and the edge of the tortilla to prevent a cream cheese blow-out during rolling. You can adjust the amount of cheese mixture to your preference; we like to use enough to yield at least ¼-inch – ½-inch of cheese mixture.

4. Roll-up your tortilla. Using a sharp knife, cut the roll into ½ inch wheels; the two ends of the tortilla are usually not as pretty as the middle and make great treats for the chef and nearby foodies. Transfer the roll-ups to a serving dish.

5. You can serve the roll-ups right away or cover and chill them for 20-30 minutes in the fridge.

Yields: 25-30 roll-ups.

This recipe comes to Home Style Austin from our Brand Director, Patrick (it was his Mom’s recipe). This evolved from a Mushroom Turnover recipe into something we transformed into an annual treat for St. Patrick’s Day by stamping the turnovers into little shamrocks.

Foodie Tips:

  • Use fresh mushrooms for a flavor explosion. Try a little more salt and some pepper if your tongue doesn’t tingle on your first “go” of it.
  • Can’t find three 3-ounce packages of cream cheese? You’re not alone. It seems our modern day bellies are bigger than the “small packs” so you’ll most likely have to buy multiple 8-ounce blocks or containers of the good stuff and trim ‘em down.
  • Don’t have a 2¾” cookie cutter? I found a small juice glass in my kitchen that measured-up quite fine.
  • While the original recipe calls for an ungreased cookie sheet, I think I went a little liberal with the egg brushing. I found some PAM Baking Spray helped a lot.
  • Why not create a mushroom masterpiece of your own? I used a clover-shaped cookie cutter and made my own version of this tasty treat… debuting this St. Paddy’s Day 2012.
  • This recipe yields enough for a party. If you don’t want to prepare 50 turnovers, half the recipe!

Ingredients: 

9 Ounces  |  Cream Cheese, Softened
½ Cup  |  Butter, Softened (use Falfurrias brand butter)
1½ Cups  |  Sifted Flour
½ Pound  |  Mushrooms, Minced
1 Large  |  White Onion, Minced
3 Tablespoons  |  More Butter, Softened
1 Teaspoon  |  Salt
¼ Teaspoon  |  Fresh Thyme Leaves, Minced
2 Tablespoons  |  Flour
¼ Cup  |  Sour Cream
1  |  Cage Free Egg, Beaten

What To Do:

1. Early in the day or 2 hours before serving, place in a large bowl the cream cheese, butter and flour. Beat with an electric mixer at medium speed until soft dough forms.

2. Wrap dough in waxed paper and refrigerate at least one hour.

3. In a medium-sized skillet over medium heat, cook the mushrooms and onion in 3 tablespoons butter until tender, about 5 minutes.

4. Stir in salt, thyme and 2 tablespoons flour until blended and then stir in the sour cream (yes!).

Mushroom Turnovers In The Making5. On a floured board, thinly roll-out one half of the dough and cut into about 12 circles using a 2¾” cookie cutter. Roll dough scraps into ball and refrigerate.

6. On one ½ of each circle, place a teaspoon of the mushroom mixture. Bush the edges with egg and fold the edges over the filling to meet the bottom edge.

7. With a fork, press edges together and prick tops in three places to let the steam out. If you want to enjoy your turnovers for St. Paddy’s Day you can stamp them with a clover-shaped cookie cutter at this step – note: there will be spoilage!

8. Place turnover on an ungreased cookie sheet. Repeat with remaining dough and mushroom filling until you’re all done.

9. Preheat oven to 450°F.

10. Brush the turnovers with egg.

11. Bake 12-15 minutes or until golden brown.

Makes about 50 turnovers. Serve warm.

This recipe puts a heart-inspired twist on our Signature Lemonberry Cups recipe. There’s no baking involved, so these Cupid Cups are super-easy to make and feature fresh heart-shaped strawberries right on top!

Instructions For How To Make A Strawberry Heart By Home Style AustinHome Style Austin  Making your strawberry hearts is surprisingly simple! Remove the crown (leaves) from the strawberry then slice the strawberry in half. Using a small heart-shaped pie cutter/cookie cutter center the cutter on the fruit then cut. Voilà!

Home Style Austin  For an extra-special treat, we suggest using ChocoMaker Belgian Dark Chocolate Dessert Cups which will yield about 16 treats (they’re about twice as big as the fillo shells). If you prefer fillo, you can find the mini fillo shells in the freezer section of your local Austin HEB. Jars of lemon curd will most likely be waiting for you on a shelf by the jams and jellies.

Home Style Austin  To decorate: You can easily tint the cheese pink by adding 4-5 drops of red food coloring. To dust, or not to dust – that is the question! We dusted with powdered sugar!

To make your own tube simply fill one end of a clean plastic or “Ziploc” bag with the mascarpone mix. Flatten and remove the air space above the icing and cut a small piece of the bag’s corner away. Holding the bag in your palm you can squeeze out the desired amount of mascarpone!

3. Place the Cupid Cups in the refrigerator for a 30-minute chill before serving.

4. Before the tasty unveiling, give the Cupid Cups a light dusting of powered sugar. This step is optional but creates a pretty topping for the dessert.

Let’s Go Bananas!

This recipe comes to me from Patrick, who handles marketing here at Home Style Austin. He promised it was one of his family’s tasty time-honored recipes.

He was right! This bread makes for a great morning meal, a side or dessert. Best make two loaves – one for home and one for the office or for a gift. You just scored friends for life.

Ingredients:A Banana Bread Recipe by Home Style Austin

1½ Cup  |  Sugar
½ Cup  |  Falfurrias Brand Butter
2  |  Cage Free Eggs, Beaten Well
3  |  Bananas, Mashed Well
½ Cup  |  Nuts, Finely Ground (I like pecans)
½ Teaspoon  |  Baking Soda
4 Tablespoons  |  Buttermilk
1½ Cups  |  Flour
1 Teaspoon  |  Baking Powder
1 Teaspoon  |  Vanilla

What To Do: 

0. Preheat oven to 350°F.

1. In a large bowl, mix the first five ingredients.

2. Dissolve the soda in the buttermilk; add to the first five ingredients.

3. Mix the flour with the baking power; add to the ingredients along with vanilla and mix well.

4. Grease the bottom of a baking pan then line the bottom of the pan with wax paper.

5. Pour batter into baking pan and bake at 350°F for 1 hour and 15 minutes.
